Baked Potatoes with Parsley Oil

Baked potatoes are naturally low fat, healthy, with great source of vitamins and minerals, and so yummy!

INGREDIENTS

  • 4 baking potatoes
  • 300gm of seasonal mushrooms
  • 3Tsp Olive oil 
  • 1 bunch of parsley
  • Salt and pepper
  • Grated parmesan cheese to taste 
  • 1 tsp Adaptogen Mushroom Elixir Focus

INSTRUCTIONS

  • Preheat the oven to 200ºC (about 180ªFan/Gas 6)
  • Clean the potatoes well and dry them with the skin, Prick them several times with a fork and sprinkle with salt.
  • Bake directly on the oven rack for 1 to 1:30 hours, until tender.
  • While the potatoes are cooking, slice the mushrooms. Heat two tablespoon of olive oil in a small skillet and cook until tender. Chop the parsley and add 1 tablespoon of olive oil. Salt and pepper to taste
  • When the potatoes are ready, cut them in half and mash the meat with a fork.
  • Add a good spoonful of mushrooms on top of the potato, a tsp of Cokare elixir extract and a spoon of parsley oil and grate a little parmesan cheese on top.
  • You can place the potatoes under the grill for a short moment to melt the cheese a bit.
