The Baked Potatoes With Parsley Oil

Baked potatoes are naturally low fat, healthy, with great source of vitamins and minerals, and so yummy!



Preparation


  1. Preheat the oven to 200ºC (about 180ªFan/Gas 6)
  2. Clean the potatoes well and dry them with the skin, Prick them several times with a fork and sprinkle with salt. Bake directly on the oven rack for 1 to 1:30 hours, until tender.
  3. While the potatoes are cooking, slice the mushrooms. Heat two tablespoon of olive oil in a small skillet and cook until tender. Chop the parsley and add 1 tablespoon of olive oil. Salt and pepper to taste
  4. When the potatoes are ready, cut them in half and mash the meat with a fork.
  5. Add a good spoonful of mushrooms on top of the potato, a tsp of Cokare elixir extract and a spoon of parsley oil and grate a little parmesan cheese on top.
  6. You can place the potatoes under the grill for a short moment to melt the cheese a bit.
